Interest in fresh vegetables is on the increase due to their protective effects against several diseases. Listeria monocytogenes is a human pathogen easily found in vegetables. The purpose of this review article is to analyse the influence of the agricultural practices applied in pre-harvest, the environmental biotic and abiotic factors characterising the cultivation field, as well as the handling procedures at harvest that might greatly influence the presence and the levels of L. monocytogenes in fresh produce. Background Fresh produce occupies an increasingly important place in the human food supply because of its health-promoting nutritional properties. Most fresh produce is eaten raw or after minimal processing and, consequently, pathogen contamination can represent a serious health risk. International audience; Abstract Aim: To investigate how the survival of Listeria monocytogenes on parsley leaves may affect its ability to sustain process-related harsh conditions and its virulence. Methods and Results: Parsley seedlings were spot inoculated with stationary phase cells of L. monocytogenes EGD-e and incubated for 15 days. Each day, bacterial cells were harvested and enumerated, and their ability to survive acetic acid challenge (90 min, pH 4.0), to colonize abiotic surfaces and to grow as biofilms was assessed.
